Hello & Happy Monday!!

 

 

 

 

 

 

When it comes to Monday’s, I feel like I’m always reaching for the most effortless eats. Since I cook full time, I don’t get to indulge in meal prep! That being said, I never have anything prepped for lunch and I’m always reaching for some avocado toast or quick and easy hummus!

 

When it come to hummus, I’ve enjoyed it since 2002, when there was only Sabra lol. At this point, my tastebuds are so over traditional hummus that I have to take a modern approach and mix it up. Like many concepts, hummus is what I would also refer to as a “blank canvas”. You can take the flavor profile in any direction you desire. 

 

You can cater to the season, pack it with as much nutrients as you like, there are countless color variations, and you can even make a dessert option! (believe it or not, dessert hummus is really good!)

 

In terms of dressings, Green Goddess is my personal favorite! There is something about the flavors that just blend seamlessly together and I love tarragon. It’s really only used in a handful of dishes, so I jump at the opportunity to use it whenever I can. 

 

 

 


 

What I love about this hummus is, everything! It’s quick, easy, affordable, veggie and flavor packed, vibrant, perf for the summer, filling, can be used as a spread on sammies, and is an all around crowd pleaser!

Green Goddess Hummus

Ingredients

  • 1 avocado 
  • 1 small garlic clove, minced.
  • 1/2 cup olive  oil
  • 2 tbsp lime juice (or lemon)
  • 1/2 cup chopped parsley.
  • 1/4 cup chopped tarragon.
  • 3 Tbsp chopped chives.
  • 2 cups spinach
  • 2 cans chickpeas, drained
  • 1/4 cup tahini 
  • salt/pepper as desired
  • Garnish: avocado, chopped scallions and parsley

Instructions

  1. Throw all of the ingredients in a food processor. Blend until smooth. Add additional olive oil or water if needed to achieve desired consistency Optional: Garnish with avocado, chopped scallions and additional parsley.
