In addition to these solutions, food is number one. You can’t expect your health to do a complete turnaround when you’re consuming unhealthy foods that are laden with sugar or preservatives.

While there are countless veggie packed recipes I go to when under the weather, for the majority they are too involved especially when your energy levels are lower. That being said, Buddha Bowls are my preference as they encompass a variety of veggies that can easily be thrown together, are filling and give your immune system the boost that it needs!

What I love about this particular recipe is that it packs color, multiple flavors, textures, pickled red onion (my fave), rice vinegar to give the rice a sushi like flavor, requires minimal effort, includes an easy dressing, is filling, affordable, aesthetically pleasing, nutrient dense, and even non vegan approved!! (Sprouts were also found in a credible study to reduce your risk of various cancers)

Buddha Bowl with Citrus Tahini Dressing

  • 1 cup cooked jasmine rice (add 2 tbsp rice vinegar, 2 tsp sugar)
  • 1/2 avocado
  • 1 cup shredded purple cabbage 
  • 1 cup tofu 
  • 1/2 cup cucumber
  • 1/2 cup alfalfa sprouts
  • 1/2 cup bean sprouts
  • fresh orange 
  • 2 sprigs cilantro
  • 1/2 cup shredded carrots
  • 1 tbsp black sesame seeds
  • 1/2 cup pickled red onion 
  • Dressing: 
  • 1 tbsp tahini
  • 1/2 squeeze fresh orange


  1. Cook your rice following instructions, simply add the optional rice vinegar and sugar.
  2. Pickled Red Onion: Allow sliced red onion to soak in vinegar, water, 1 tbs sugar, an for as long as you can. I always have mine on hand in the fridge to throw onto everything from salads to sandwiches.
  3. Salad: Throw everything in a bowl and combine all of the ingredients for the dressing and enjoy!
