Hello & Happy Tuesday!!

I’ll be honest, I’m not a HUGE grain person..

I eat quinoa sometimes, I love Cous Cous when I have the time and ingredients to make it, but I rarely whip up rice..

Unless it’s Coconut rice!

  3. 2 cups Jasmine rice
  4. 1/2 cup pineapple juice
  5. 2 cup water

  7. 1/2 squeeze lime

Instructions
  1. In a bowl combine everything coconut milk, lime, and pineapple juice and sea salt. If you don't have pineapple juice simply press the fresh pineapple through a sieve and extract the juice.
  2. In a pot over high heat add 2 cups of water and the mixture. Once boiling add rice, then reduce to a simmer leaving the lid on top. Leave covered without peaking & then gently fluff with a fork. Toss in the room temperature dragonfruit for pink color. Top with a fresh squeeze of lime. For more of a pink color, toss in additional defrosted pink dragonfruit.
