Vegan Coconut Lime Rice

I’ll be honest, I’m not a HUGE grain person..
I eat quinoa sometimes, I love Cous Cous when I have the time and ingredients to make it, but I rarely whip up rice..
Unless it’s Coconut rice!
This dish was inspired by a craving for coconut rice, but something more on the sweeter side and with color.. bright pink to be exact lol.

Yields 2-4 servings

- 3/4 can coconut milk
- 1 tsp sea salt
- 2 cups Jasmine rice
- 1/2 cup pineapple juice
- 2 cup water
- 1/2 packet defrosted pink dragonfruit
- 1/2 squeeze lime
- Avocado and black sesame seeds garnish optional
- In a bowl combine everything coconut milk, lime, and pineapple juice and sea salt. If you don't have pineapple juice simply press the fresh pineapple through a sieve and extract the juice.
- In a pot over high heat add 2 cups of water and the mixture. Once boiling add rice, then reduce to a simmer leaving the lid on top. Leave covered without peaking & then gently fluff with a fork. Toss in the room temperature dragonfruit for pink color. Top with a fresh squeeze of lime. For more of a pink color, toss in additional defrosted pink dragonfruit.
