Hello & Happy Friday!!

 

 

 

 

 

All I can say is, life get’s busy and sometimes you just want to reach for the quickest eats. That being said, I’m not talking about fast food, or microwavable meals.. 

 

 

I’m talking about real food made in minutes that’s packed to the max with nutrients and flavor!

 

 

While many of my recipes can be intricate and include a variety of ingredients, this is one of those no brainer concepts that involves a handful of staples you should always have in your kitchen.

 

 

Truth, sometimes, no brainer concepts are the best concepts!

What I love about this recipe is that you can use a variety of vegetables to create the same concept. From yellow squash to mushrooms, whatever you can throw on a griddle for a few minutes is a perfect match for this combo!

Vegan Spinach and Avocado Pesto Veggies Sammies

 

 

 

 

Yields 2 sandwiches

Pesto Veggie Sammies

Ingredients

  • 1 zucchini
  • 2 bell peppers
  • Pesto:
  • 1/2 cup of any nuts
  • 1 bunch basil
  • 1 tbs nutritional yeast
  • 2 cloves garlic
  • 1/2 tsp sea salt
  • 1/3 cup olive oil
  • 1/2 squeeze lemon
  • 1/2 cup Follow Your Heart Mayo
  • 1/2 avocado
  • 1 cup spinach
  • Topping/other:
  • 1 cup arugula
  • 2 buns

Instructions

  1. In a food processor add the all of the pesto ingredients minus the mayo. Scrape down the sides and process until smooth. Set aside. Fire up a griddle and cook the sliced zucchini and bell peppers. Spray with olive oil and sprinkle with salt and pepper. Grill fro 3 minutes on medium to high then rotate. Burn marks add flavor! Set aside to cool.
  2. Assemble the sammies by combining the pesto with a lil bit of vegan mayo. Stack veggies high and top with avo pesto mayo and arugula. You should have 1/2 cup+ of additional pesto to use for a variety of eats!
