Kale & Quinoa Salad
Hello & Happy Friday!!
If there is one kale salad I have an affinity for, it’s this Quinoa & Kale Salad with all of my faves!
As a whole I’m not obsessed with quinoa. Its fun to make fritters with, but I don’t typically cook a lot of grains. However, this salad is the one reason why I love working with it!
What I love about this dish is that it contains accessible and affordable ingredients, can be made in advance, in bulk, has multiple textures, flavors, slightly sweet with cranberries, slightly tart with tofu, won’t spoil in days, and will leave even your non vegan peeps longing for more!

- 2 cups cooked quinoa
- 1 bunch kale, massaged, chopped
- 1 tbsp olive oil
- 1/2 cup dried cranberries
- 1/2 cup toasted almonds
- 1 cup tofu feta (check out my recipe in the clip above or get the full recipe on EDS)
- 1/2 cup red wine vinegar
- 1/3 cup dijon
- 1/3 cup olive oil
- salt & pepper
- Wash, massage w/olive oil, and slice kale, combine with remaining salad ingredients. Combine all of the salad dressing ingredients, whisk until smooth. Chill, then serve!
