With summer approaching I’m all about light nutrient dense eats! One thing we can all agree that we always gravitate towards, is classic chips and salsa! Perhaps it’s because this fruit thieves in the heat that it’s ubiquitous for summer, but at any rate, if it’s summer, my kitchen is inundated with fresh tomatoes! (don’t store in fridge, like ever.)
As I’ve gotten comfortable with my standard go to salsa recipes over the years, I love to mix it up and use different herbs, fruit, or heirloom tomato varieties to get some diversity in my recipes! I find that through introducing just one of the three you can put a modern spin on a class dish.
What I love about salsa in general is that it’s a no brainer dish. Whether you’re an iron chef in the kitchen or have no experience period, you can whip up salsa with ease. The only way that on can make a bad batch of salsa is if the consistency is too watery or too thick Both can be resolved by simply throwing in a fresh tomato to increase the water content or adding a roasted one to make a thicker consistency.
What I love about this salsa is that its a simple addition that puts a new twist on such an effortless recipe. It packs the same flavor we’ve all come to know and love, but the fruit adds another dimension of favor that just puts it over the top! It pairs perfectly with with Late July® tortilla chips!
Simple, easy, more flavorful, and the strawberry pairs perfectly with the jalapeño! In addition to its effortlessness and affordability, it packs tons of lycopene that instantly makes my skin glow.

Yields 4 cups

- 4 vine ripe tomatoes
- 1/2 red onion, finely chopped
- 3 sprigs cilantro
- 1/2 squeeze lime
- 1 jalapeno (chopped)
- 1 cup strawberries (chopped)
- 1 tsp sea salt
- Late July® Tortilla Chips
- 4 basil leaves (sliced) *optional
- Wash and finely chop ingredients. Drain tomatoes of excess water. Combine, set in fridge until ready to serve!
You can add apple cider vinegar to add tartness to the salsa!
