I wanted to take the time to share one last recipe before game day tomorrow! If you know me, you know I love all things tart and sour.. 

 

So pickles are one of my faves!!

 

While I love fried pickles, I try to gravitate away towards anything fried. With that being said, I decided to opt for a baked variety that packs lots of flavor without the greasiness and added calories!

 

 

 

 

 


 

What I love about this recipe is, everything! It’s quick, easy, affordable, can easily be made in bulk, is great for entertaining, you can pair with whatever sauce you like, it’s perf for any season, and is non vegan approved!

Vegan Baked Pickle Chips

Ingredients

  • 40 pickles 
  • 1 cup flour
  • 1 cup almond milk
  • 1 1/2 cups Panko
  • 1 1/2 tsps dill
  • 1 tsp garlic
  • 1 tsp onion powder 
  • salt/pepper as desired 

Instructions

  1. Preheat the oven to 375. In a bowl combine the flour and spices. Add the almond milk. The batter should be on the thicker side. Set another bowl out with Panko. Take the sliced pickles and pat the excess moisture off with paper towels. Dip in the wet, then the Panko, and bake for 25 minutes or until golden brown. Rotate midway for an even bake. Enjoy with vegan ranch dressing!
