As someone who cooks daily, I rarely gravitate towards ready made vegan products, except when its Sweet Earth Natural Foods!


This company offers a myriad of vegan options from burritos to bacon and have the most well thought out combinations I’ve yet to come across. The faux bacon strips remain to be my top favorite that I’ve ever experienced. 


With the company releasing the new Mediterranean Burger, I jumped at the opportunity to create a recipe that would amplify the quality of their products.. and the Eat Drink Shrink vegan Mediterranean Burger was born!








What I love about this recipe is.. everything! It offers multiple flavor profiles, textures, all the components are easy to throw together and toppings can be incorporated into multiple recipes, involve affordable and accessible ingredients, is nutrient dense, has aesthetic appeal, packs color, and is non vegan approved!!







This burger is so on point, I can’t even say what my favorite part about it is.. You just have to see for yourself!

Vegan Mediterranean Burger

  • 4 Sweet Earth Foods Mediterranean burger patties
  • 1 bell pepper
  • 2 cups arugula
  • 1/2 avocado
  • 4 buns (use one full bun, bottom bun from another)
  • Pickled red onion:
  • 1/2 cup red onion
  • 1 cup vingar
  • Tofu feta:
  • 1/2 block tofu (firm, cubed)
  • 4 tbsp fresh dill
  • 4 tbsp fresh organo
  • 1 cup apple cider vinegar
  • 1 cup water
  • 3 tbsp olive oil
  • Tzatzki sauce:
  • 1/2 cup vegan yogur (non flavored)
  • 4 tbsp fresh dill
  • 1 english cucumber, thinly sliced
  • squeeze of lemon
  • 1 clove garlic (minced)
  • sea salt/pepper
  • Olive tapenade:
  • 3/4 cup olives (seedless)
  • 2 tbsp olive oi
  • 1 tbsp capers
  • squeeze of lemon
  • 2 sprigs fresh parsley


  1. Tofu feta: Throw everything together in a jar, chill in the fridge overnight
  2. Tzatzki sauce: Throw all the ingredients together, set aside in fridge.
  3. Pickled red onion: throw ingredients in a jar, let set overnight.
  4. Tapenade: Throw everything in a food processor, pulse until smooth
  5. Peppers and burgers: Throw peppers and burgers on a hot grill for 7 minutes rotating midway.
  6. Assembly: layer all the ingredients as desired and enjoy!
