If there is one thing I loved as a child that I rarely have today. It’s breakfast cereal. Over time your tastebuds mature and I typically crave protein in the morning as it keeps me fuller longer. However, there are those days when I get a craving for something sweet, something nostalgic..

While nutritionist can cringe at the sight of breakfast cereal, I feel that the most important thing to emphasize is moderation and to always make an objective to maximize the nutritional value of recipes.

    Chia Pudding
  • 1/3 cup chia seeds
  • 1 1/2 cups almond milk
  • 1 tsp vanilla bean paste or vanilla extract
  • 2 tbsp agave or stevia (optional)
  • Apples:
  • 1 apple, peeled, sliced
  • 1 tsp cinnamon
  • 1 tsp avocado oil (or any neutral oil)
  • Other:
  • 1/2 cup Kellogg's Apple Jacks cereal
  • Garnish with cinnamon stick or mint (optional)
  • Coconut whip:
  • 1/2 can of coconut milk (refrigerated, solid portion only)
  • 1 tsp vanilla bean paste or vanilla extract
  • 1/2 tsp cinnamon
  • 3 drops stevia or 3 tbsp agave


  1. Combine the chia seeds, almond milk, and optional agave, store in the fridge for 30 to 40 mins. In a small pan over medium heat sauteee the apples, oil, cinnamon, optional brown sugar, and cook for 10 minutes or until softened, set aside.
  2. Coconut whip: Throw all the ingredients in the bowl of a standing mixer (or you can do it by hand), whip until smooth, chill in the fridge until ready to use.
  3. Once the chia pudding is set begin creating layers. Chia pudding, cereal, cinnamon apples, then coconut whip. Store in fridge until ready to enjoy!
