 ABOUT THE FOUNDER

 

Annemarie Colbin, Ph.D, founded the Natural Gourmet in 1977. She has been called a “maverick nutritional theorist”, and is an internationally recognized health educator, author, consultant and speaker, specializing in food and its effects on health. She is the author of Food and Healing, which has been translated into six languages, The Natural Gourmet(both from Ballentine Books) and her latest book, The Whole-Food Guide to Strong Bones (New Harbinger Publications, 2009).

Dr Colbin wrote a regular column for New York Spirit magazine for many years, has lectured widely, and did personal nutritional counseling for individuals and families. Demonstration and Lecture

The recipes and focus of this class include high-quality whole foods that enhance healthy immune response, possess anti-cancer and antioxidant properties, replenish healthy microorganisms in the gastrointestinal tract, help reduce inflammation and joint pain, aid digestion and replace minerals. Some time will be devoted to translating a dietary prescription into “real” healing food, menu planning, taking a virtual shopping tour and helpful tips about stocking your pantry.

There were so many great recipes we worked with, but below were my FAVES!!

 

 

CURRIED SPICE BAKED SWEET POTATOES
Easy Peasy Sweet Potatoes

Ingredients
  1. 2 medium sweet potatoes, washed and pierced in the center with a fork
  2. 1 teaspoon fresh ginger, finely grated,
  3. 1/2 to 1 teaspoon Madras curry powder
  4. Pinch of cinnamon
  5. 1/8 teaspoon salt
  6. 1 teaspoon extra virgin olive oil
Instructions
  1. 1. Preheat oven to 400 degrees
  2. 2. Place sweet potatoes on a low sided roasting pan and bake for 30-45 minutes or until soft (to quicken cooking time, cut potatoes in half, lengthwise and place face down on roasting pan, and add about 1/2 water to roasting pan)
  3. 3. Remove potatoes from the oven and allow to cool
  4. 4. Slice in half, lengthwise and scoop out center flesh, leaving a 1/4 inch rim of sweet potato attached to the skin (this will help hold skin together)
  5. 5. Place flesh in bowl and mix the remaining ingredients. Stir until smooth and creamy.
  6. 6. Refill potato skins with mixture, place on a baking sheet and bake at 400 degrees F, until heated through and slightly golden on top
  7. 7. Serve hot
Notes
  1. Could also use cumin, cardamom, all spice, cloves, coriander in addition to the curry powder

This guacamole was amazing just like any fresh guacamole, but had peas incorporate into the mix!!

 

By adding peas to the recipe you increase the protein intake!

 

Why is guacamole a great choice?

 

Healthy fats – you absorb nutrients with the addition of fat

Acocados can kill cancer sells (apoptosis) and even suppress blood supply to a tumor

Cilantro can kill H pylori bacteria (causes stomach ulcers)

We learned about the Brazilian collard greens! They had a more richer flavor and were perfect angle hair style and can also be used for wraps!!

  • 3/4 pound Granny Smith apples
  • 3/4 pound D'Anjou pears
  • 8 ounces fresh or frozen blueberries
  • 1 tbsp lemon juice
  • pinch of sea salt
  • 1/4 teaspoon ground cinnamon
  • pinch of cardamom
  • 1/2 cup apple juice or apple code mixed with 1 tbsp arrowroot

We made homemade whey and created a fruit smoothie. I don’t consume dairy, but was open to sample so I could share with you! The flavor was tart like that of Kefir or perhaps greek yogurt. Why has multiple health benefits that are wonderful for cancer patients. Why is said to give blood sugar control, has immune qualities, assists with lipidemia, and is great for muscle building.

This recipe was one of the neatest by far.. 

 

 

Kudzu is a plant that grows freely in Georgia, but did you know that you can use it to cook with as a thickener?!

 

For those who are suffering with dysphagia (not being able to swallow), being able to whip up something with a soothing soft texture that packs lots of flavor is a must!!
