Hello & Happy Tuesday





Truth, I’ve always heard of monkey bread, but wasn’t quite sure as to what it actually was. I typically had seen it prepared in the bun cake molds, but I wanted to “break away from the mold” and make more of an individual option, which is idea for serving guest and tends to prevent over consumption lol, so I decided to do muffins!



I’ve been on a coffee kick perhaps because I drink it minimally and never use it in recipes, but it’s pure heaven when paired with bananas especially!







What I like about this recipe is that it’s easy, packs a coffee flavor, minimal ingredients, great presentation, and is the perfect switch to the classic cinnamon roll!

Coffee Monkey Bread

  1. 1 package of prepared dough
Coffee coating
  1. 1 cup almond milk
  2. 1 tsp sea salt
  3. 8 tablespoons Earth Balance vegan butter
  4. 1 teaspoon pure vanilla extract
  5. 1/2 cup coffee grounds
  6. 1 cup almond milk
  7. 1 cup Better Body Foods coconut sugar
  8. 2 teaspoons ground cinnamon
Sugar Coating
  1. 1 cup coconut sugar
  2. 2 tbsp cinnamon
  3. 1/3 cup coffee grinds
  1. 1 cup powdered sugar
  2. 1 tbsp almond milk
  1. Heat the almond milk, coconut sugar, salt, and vegan butter in a small saucepan over low heat until the butter is just melted. Remove from heat and add vanilla and coffee grinds, combine, set aside to cool until warm to the touch. Form small balls with the dough and dip into the butter/coffee mixture and place in the muffin tin. Coat tops with the sugar mixture.
  2. Bake for 25 minutes or until lightly golden. Cool 5 minutes on rack. To top with icing simply wait til they are completely cooled then combine the ingredients and drizzle!
Eat. Drink. Shrink.
