I recently had the opportunity to sample the Organic Gemini TigerNut products and was elated to experience the “TigerNut” as just like most of you, as soon as I heard about this company I was  taken aback, .. my first thought? 

 

 

 WHAT THE HECK IS A TIGERNUT?!

FACTS:

 

 

A TigerNut is not actually nut, but a small root vegetable. Around two million years ago in the heart of Africa, our Paleo ancestors relied heavily upon this super-root that made up 80% of their diet.

 

TigerNuts are said to be #1 source of  fiber “Resistant Starch”, a PREbiotic fiber that resists human digestion and becomes fuel for our PRObiotic bacteria, but is also very rich in mineral content (Sodium, Calcium, Potassium, Magnessium, Zinc and traces of Copper

About a year and a half ago, my doctor diagnosed me with ovarian cancer and told me that I would need to have one of my ovaries removed. After visiting the best specialists in New York, each of them confirmed that initial diagnosis. The most devastating part was that I would unlikely be able to have children.

 

We decided to pursue a holistic treatment first and reserve invasive surgery for the final alternative. I enlisted the help of a holistic doctor and began a diet restricted to food that was raw, organic, Non-GMO, gluten-free, and dairy-free. George joined me in support. It was a drastic change for us, since we were used to eating whatever we wanted, but we stuck to it and monitored our health closely.After a month, my doctor informed me that the cyst appeared to be shrinking. After two months, he confirmed that it had shrunk considerably. By the end of the third month, the cyst had disappeared completely. We were all in disbelief.

 


One of the foods that was essential in this journey was an ancient superfood known as a TigerNut. It is a root vegetable (not a nut) that originates from Northern Africa and the Mediterranean. TigerNuts are loaded with fiber in the form of Resistant Starch, a prebiotic that actually helps our bodies to develop probiotics.They are rich in iron, potassium, and other essential nutrients.

We created a company called Organic Gemini that uses TigerNuts as the centerpiece for many different types of products, including a beverage called Horchata, a gluten- free flour, a cold-pressed oil, and of course the raw organic TigerNuts themselves. Although TigerNuts, also known as chufa, are popular in different parts of the world, we are excited to introduce it to the US through these products. We are honored and humbled to be able to help other people experience this wonderful superfood so that they can reap the health benefits that we have experienced and continue to experience.

Raw, Organic, Sun-Dried TigerNuts have a sweet and slightly nutty flavor. TigerNuts are organic, Non-GMO, Vegan, Nut & Gluten Free, Kosher, Raw, and allergy free.

 

They are known throughout the world by different names including chuffa. A TigerNut by any name, however, is a little tuber with a great deal of superfood qualities. It is extremely high in fiber, phosphorus, potassium, and vitamins E & C.

 

Raw TigerNuts can be eaten straight out of the bag or soaked in water to soften and enhance flavor. Both are delicious!

Pumpkin Chai Chia Pudding

For the filling
  1. 2 & 1/4 cup canned organic pumpkin (not pumpkin pie filling)
  2. 1/4 cup full-fat coconut cream
  3. 1/4 cup pure maple syrup
  4. 3 tbsp arrowroot powder (or cornstarch)
  5. 2 tsp vanilla extract
  6. 1 tbsp of Pumpkin Spice
Chia seed Pudding
  1. - 4 table spoons of chia seeds
  2. - 2 tsp of vanilla extract
  3. - 1 cup of Organic Gemini Chai tiger Nut Milk
Crust
  1. - 1/2 cup tiger nut flour
  2. - 1/2 cup soaked tiger nuts
  3. - 1/2 cup dates
  4. - pumpkin pie seasoning as desired
Chia seed Pudding
  1. - take 1/4 cup of chia seeds and soak overnight in tiger nut chai milk
  2. - add a dash of pumpkin spice seasoning
Crust
  1. - blend soaked nuts, dates, and pumpkin spice in a food processor, and press into dish
Pumpkin layer
  1. - Mix corn starch and maples syrup together until clumps dissipate
  2. - add the rest of the ingredients.
Notes
  1. Soak the tiger nuts overnight in water, they won't get as soft as your typical nut varieties, but they just require a few more pulses in the food processor!

For the filling
  1. 2 & 1/4 cup canned pumpkin
  2. Agave as desired
  3. 1/4 cup full-fat coconut cream (or almond milk), softened
  4. 1/4 cup pure maple syrup
  5. 3 tbsp arrowroot powder (or cornstarch)
  6. 2 tsp vanilla extract
  7. Pumpkin Pie seasoning as desired
Crust
  1. 1 cup pitted dates
  2. 1/2 cup Tiger Nut flour
  3. 1/2 cup graham crackers
  4. 1 cup tiger nuts (soaked overnight)
  5. 1/2 cups raw pecans
  6. 1 tsp pumpkin spice
  7. 3/4 cup Tiger Nut milk if needed
Instructions
  1. - Preheat oven to 325F.
  2. - Blend arrow root and maple syrup in a bowl using a whisk, making sure to remove any clumps
  3. - Blend the rest of the Ingredients together in a bowl with a whisk until combined.
  4. - Set aside until you bake the crust
Directions for crust
  1. - Soak the tiger nuts overnight in water, discard the water.
  2. - Place the crust ingredients in your blender and pulse until the mixture comes together; this should take about 1 minute (tiger nuts take longer).
  3. - Press this mixture evenly onto the bottom of the prepared dish
  4. - Poke a few holes at the bottom of the pie with a fork.
  5. - Bake at 325F for 15-18 minutes.
Following the crust
  1. Scoop the filling into the pre-baked and cooled crust.
  2. Smooth out with a spoon. Bake for 20 mins at 325F.
  3. Transfer to fridge to set for a minimum of 3-4 hours or overnight.
  4. You can enjoy served warm, but best served cold after storage.
