Peach Chia Pops

If there is something I’m obsessed with, its Chia Pops!
While many become accustomed to having chilled pudding, I love to have them in a frozen bar, especially on a hot summer day!
What I love about the concept of chia pops is that it the seeds add another element of texture, give a more notable appearance, add nutrients, and simply makes frozen pops more fun to eat!

- 1/2 cup or more chia seeds
- 1 can coconut milk
- 1 cup almond milk
- 1/2 tsp sea salt
- 2 tsp vanilla
- 2 peach
- 6-8 drops stevia or 1/3 cup coconut sugar
- Place coconut milk and almond milk in a blender. Add the chia seeds, sweetener of choice, vanilla extract and sea salt. Stir to combine and place in fridge for a few hours. Once the seeds begin to expand. Place the sliced peaches to the sides and then add the chia pudding.
