Hello & Happy Monday!!

 

 

 

I’ll be honest, I rarely get crafty with holiday baked goods. Learning to even make vegan icing and decorate anything has never been my strong suite as it takes a certain level of precision to get things just right..

 

Which for me, being super accurate can just take the fun out of it when you want to be super creative lol.

 

 

These cupcakes though were inspired by their fun aesthetic appearence and my affinity for Shirley Temples. I can distinctly remember having them as a kid all the time, and I was just enamored with the flavor combos of lemon Lime and cherry!

What’s great about this recipe is that it can be used for any occasion and not just halloween, and its super easy, requires minimal ingredients, and is like instantly taking a trip down memory lane..

Shirley Temple Cupcakes

Ingredients
  1. 1 tsp vanilla extract
  2. 1 1/2 tsp almond extract
  3. 1/2 cup vegan butter softened
  4. 5-8 tbsp agave
  5. 1 3/4 cups all-purpose flour
  6. 1/2 tsp baking soda
  7. 1/4 tsp baking powder
  8. 1/4 tsp salt
  9. 1/2 cup Zevia lemon blend
Icing
  1. 1 cup confectioner sugar
  2. 1 tbsp Zevia Soda
Cherry Glaze
  1. 1/2 cup grenadine and cherries
  2. 1 tbsp arrowroot
  3. 1 tbsp agave
Instructions
  1. Preheat oven to 350 degrees.Line one cupcake pan with 12 paper or silicone liners.
  2. In the bowl of a stand mixer or food processor cream together butter, extracts, agave. until light and fluffy.
  3. Whisk together flour, baking soda, baking powder and salt, set aside. Add the butter mixture and fold into flour. Gradually add in the Sprite mixture as it will foam. Fill cupcakes in the papers or mold. Bake for 15-20 minutes. Set aside on cooling rack to fully cool.
Cherry Glaze
  1. In a small sauce pan over medium heat throw in the minced cherries and juice with arrowroot and continuously try to whisk to make sure the powder dissolves. Cook for 5-7 minutes until the sauce turns more into a syrup. Set aside to cool
  2. Once cupcakes have cooled completely, fill with cherry mixture by filling injecting syringe with roughly 1 tbsp of cherries. Place the needle in the center of a cupcake and push the plunger as you gently pull the needle up and out of the cupcake. Repeat with the rest of the cupcakes.
Icing
  1. Throw powdered sugar and tbsp of soda in a bowl, mix until combined and has super thick texture. If too liquid like add more sugar. If too thick add more soda. Glaze cupcakes that are completely cooled. Place in fridge for few minutes to fully set.
  2. Top with extra glaze and creepy hatchets and you have yourself some spooky cupcakes lol
