Vegan Pear Cobbler

Hello & Happy Friday!!

If there is one fruit that’s overlooked it’s pears! I’m not sure why that is, but I find that I rarely see it used and people gravitate more towards apples as they have more of a richer flavor versus pears that are more mild.

When it comes to using fruit, I love to throw them in a dessert and create a cobbler or crisp as it’s just so easy! What’s fab about using fruit in desserts, which is always my approach, is that you can reduce the added sugar and let the majority of it be derived from the fruit itself.

That being said I was excited to create a holiday pear inspired dish that’s easy perf for entertaining, and the vegan Pear Cobbler was born! What’s great about cobblers, is that you can approach them however you like. You can do a traditional biscuit topping or more of a cake texture like I prefer. You can combine fruits, keep the fruit minimal and the list goes on.

What I love about this cobbler is that its more fruit than cake, as I used more to reduce the added sugar content, has minimal ingredients, can be made quickly, can be made more of a bread pudding if soaked even more during the baking process, requires little effort. perf for entertaining, non vegan approved, and is good for any holiday!

If you’re looking for that perf holiday dessert that will have all your guests swooning, you need my classic recipe for a vegan Pear Cobbler!

  • 4 pears, peeled and sliced thin
  • 1 tbs coconut oil
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/2 cup coconut sugar
  • Cobbler Batter:
  • 1/2 cup coconut oil, melted (for the dish)
  • 1/2 cup coconut sugar
  • 1 cup all purpose flour
  • 2 tsps baking powder
  • 1/4 tsp salt
  • 1 cup almond milk
  • 2 tsps vanilla extract
  • 2 tbsp derma sugar for topping: optional
  • Midway baking:
  • 1/2 cup almond milk
  • 2 tbsp coconut sugar

  1. Preheat your oven to 375 degrees and pull out a 9 by 13 baking dish. Combine pears, cinnamon, coconut sugar, and ground ginger in a large sauce pan over medium low heat. Cook the pears, stirring regularly until they are soft, about 10 minutes.
  2. Cobbler: Pour the 1/2 cup melted coconut oil into the baking dish. In a large bowl, whisk together coconut sugar, flour, baking powder, and salt. Combine almond milk and vanilla extract. Pour the mixture into the dry ingredient and combine. Don't overtax. Cover the dish in coconut oil and top with the batter. I recommend not touching to spread it at all even though I did! Top with derma sugar before baking. (optional)
  3. Bake for 20 to 25 minutes or until the edges are golden brown. Midway remove and pour almond milk combined with coconut sugar over the cobbler. Serve warm with vegan ice cream.
