Vegan Strawberry Rice Squares

Before I discuss just how amazing this modern marshmallow treat recipe is, I’d like to first state that I’ve never had a real affinity to the concept. In grade school they were like the golden ticket. Everyone wanted them in their lunches and sadly since I had school lunches for ages, I never grew fond of them.
Today the recipe is so simple it seems like a waste of time to even share..

This recipe came to fruition because I had $6 organic strawberries on the verge of spoiling in my fridge. Instead of whipping up something complex, I decided to keep it simple and put a modern twist on an old classic.
What I do love about marsh treats is that they are simple, involve a handful of ingredients, and are in many ways a blank slate. While I used a strawberry puree in this recipe, you can honestly use whatever puree you like. That being said, the options are endless!
What I love about this recipe is that it packs the same classic flavor, a hint of strawberry, a pink hue, its made without butter, has more of a softness than other treats I’ve made perhaps from the puree, and will make you look like an iron chef of marshmallow treats!

Eat Drink Shrink
Yields 10 to 12 Squares

- 3 tbsp coconut oil
- 1 package My Dandies Vegan Marshmallows
- 1 cup strawberries
- 2 tbsp sugar
- 1/2 cup water
- 1 tbsp corn starch mixed with 1 tbsp water
- In a pan over medium heat add the quartered strawberries, top with sugar and water, cook for five minutes until broken down, add the starch mix and combine. Cook for an 2 and set aside to cool.
- In a pan over medium heat melt coconut oil and add the marshmallows. Continue stirring to prevent burning. Once the marshmallows have melted at the puree. Continue stirring, once combined turn down the heat and add in the cereal in half to prevent spillage. Once combined and becoming more stiff remove from heat and place in a pan covered with wax paper. Press into the pan and store in the fridge for 10 minutes. Remove, slice, enjoy!
